About This Workshop
Advanced Éclairs is a premium follow-up to the classic choux workshop. Students build multi-component éclairs using ganaches, praline, streusel, compotes and fruit creams. The class should be marketed around creativity, modern pastry-shop presentation and advanced flavor balance.
